Filet mignon with mushrooms


This weekend, we're getting together for a delicious dish based on melting meat, wild mushrooms and onions from the kitchen garden. We're talking, of course, about filet mignon with mushrooms.

The right bottle for this dish is Pinot Noir. Filet mignon is a tender, fine meat that needs a fruity, yet delicate wine to accompany the meat with its aromas.

Ingredients (serves 4) :
- 500 g filet mignon
- 500 g mushrooms
- 2 onions
- 3 cloves of garlic
- 20 cl single cream
- 1 large glass of red wine
- 1 glass water
- 1 pinch cayenne pepper
- salt and pepper
- A bottle of Pinot Noir

Recipe:
Brown the chopped onions in butter in a frying pan.

When they are transparent, sear the fillet mignon on all sides until golden brown. Remove and set aside.

Add the mushrooms and finely chopped garlic to the pan.

Brown the mushrooms (their water must be completely absorbed) and remove from the pan.

Return the filet mignon to the pan with the glass of red wine and the glass of water.

Simmer for about 1/2 hour, adding more water if necessary.

Check that it is cooked by cutting a slice from the fillet, which should be soft and cooked through.

Add the reserved mushrooms and the crème fraîche.

Simmer together for 5 minutes and season with salt and pepper.
