Mulled wine with Merlot

A recipe for mulled wine, flavoured with Christmas spices, to be enjoyed by the fire to warm up and relax.
Ingredients
- 1 bottle of Merlot
- 1 tsp. Christmas spices
- 2 tbsp. cane sugar
- 1 tbsp. honey
- 1 tea filter
- Orange slices
Recipe:
Put your Christmas spices in your tea filter, leaving a little space for the spices to swell as they infuse.
In a saucepan, pour your wine, add your Christmas spices, sugar and honey. Heat until simmering, but do not boil. Continue cooking at a gentle simmer for 8 to 15 minutes, stirring gently from time to time. Bring out the spices when the mulled wine is sufficiently spicy. After 8 minutes, start tasting and extend the infusion according to your taste, in 2-minute increments.
Mulled wine should be drunk with enough sugar, otherwise it won't taste very good. To find the right amount of sugar and honey, you really need to taste and adjust the dosage at the end of the spice infusion to get the best restitution possible. Don't hesitate to add more if it's not sweet enough.
Serve immediately, piping hot!
